Kamut(R) is an Iron Rich Food
Kamut(R) is the popular name for an ancient variety of wheat brought to the market by the company of the same name (see the Kamut website). The Kamut(R) kernel is larger than a typical wheat kernel and it has a robust nutty flavor. One cup of Kamut(R) can contribute nearly 20% to your daily iron requirement and, thereby, an iron-rich food. However, just as with wheat and other grains, Kamut(R) must be prepared expressly to reduce the iron inhibitors it contains.
We recommend soaking Kamut(R) in warm water overnight when preparing it for breakfast cereals and salads. If you are baking with Kamut(R), we suggest grinding the berries/kernels fresh yourself and then follow our simple instructions for making sourdough bread preparations. Read more about these processes on our iron rich foods tips page.
